Celiac bicycler racer

Hi. Bicycle road racer recently diagnosed with celiacs. I was sick for about 3 years before I found out why. Now everything I use to eat is poison. What do I eat before a 70 mile road race? I am going to be on the bike for about 3 good hard hours.
