The combination of sourdough, avocado, and green chilies creates a very California-style burger. Using sourdough (or whole-wheat sourdough) bread is a welcomed change from a traditional burger bun. It ads some new flavor and give the whole sandwich a different feel. When choosing your ground turkey, be sure to take a look at fat content. Often times a "non-lean" ground turkey can have just as much, if not more, fat as a lean or extra-lean ground beef. People tend to be wary of reduced-fat cheeses because they can be somewhat dry and unappealing, but when melted on a patty and topped with other condiments, this is not the case. You (or those you are feeding) will never know the difference.
1 ¼ lb extra lean ground turkey
1 4 oz can diced green chilies
2 cloves garlic, minced
1 shallot, minced
1 avocado, sliced thin
4 slices reduced-fat Swiss cheese
4 leaves green leaf lettuce
8 slices sourdough or whole-wheat sourdough bread
salt and pepper
1 T olive oil
Optional:
shaved or thinly sliced red onion
Chili Dijon Spread
2 T light mayonnaise
1 T Dijon mustard
1 clove garlic, minced
¼ t chili powder
salt and pepper to taste
Place ground turkey in a large mixing bowl and add green chilies, shallot, garlic, and season liberally with salt and pepper. Form into four patties.
For the sauce, combine mayo, Dijon mustard, garlic, chili powder, salt and pepper, and stir well.
Heat one tablespoon of olive oil in a large, heavy skillet over medium-high heat. Add the patties, cover and cook about three minutes. Flip and cook an additional five or so minutes. Add cheese, cover and cook until melted.
Toast the bread. Spread with desired amount of chili-spread, then top with green leaf lettuce and sliced red onion if desired.
